Description

A comforting and flavorful soup inspired by the tastes of egg rolls, perfect for busy nights.


Ingredients

Scale
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups coleslaw mix
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 2 tablespoons soy sauce
  • 1 teaspoon ginger, minced
  • 1/4 cup green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Stir in the coleslaw mix and cook for a few minutes until softened.
  4. Pour in the chicken broth and bring the mixture to a simmer.
  5. Add the shredded chicken, soy sauce, ginger, and season with salt and pepper.
  6. Simmer for about 10 minutes.
  7. Serve hot, garnished with sliced green onions.

Notes

Store leftovers in airtight containers for up to 3 days, or freeze for up to 2 months without green onions.
