Ingredients

- 1 tablespoon vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups coleslaw mix
- 4 cups chicken broth
- 2 cups cooked chicken, shredded
- 2 tablespoons soy sauce
- 1 teaspoon ginger, minced
- 1/4 cup green onions, sliced
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Stir in the coleslaw mix and cook for a few minutes until softened.
- Pour in the chicken broth and bring the mixture to a simmer.
- Add the shredded chicken, soy sauce, ginger, and season with salt and pepper.
- Simmer for about 10 minutes.
- Serve hot, garnished with sliced green onions.
Notes
Store leftovers in airtight containers for up to 3 days, or freeze for up to 2 months without green onions.
