Description

Nutritious and flavorful egg bites made with cottage cheese and veggies, perfect for breakfast or meal prep.


Ingredients

  • 1 cup cottage cheese
  • 4 large eggs
  • 1 cup spinach, chopped
  • 1/2 cup bell pepper, diced
  • 1/2 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • Olive oil or cooking spray for greasing

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a muffin tin with olive oil or cooking spray.
  2. Whisk the eggs in a mixing bowl until fully beaten.
  3. Combine the cottage cheese, chopped spinach, diced bell pepper, shredded cheese, salt, and pepper until well mixed.
  4. Fill each muffin tin cup about 3/4 full with the mixture.
  5. Bake for 20-25 minutes, or until puffed and golden.
  6. Cool for a few minutes before removing from the muffin tin.
  7. Serve warm or store for later enjoyment.

Notes

These egg bites can be stored in an airtight container in the fridge for up to 4 days or frozen for about 2 months.
