- 1 cup cottage cheese
- 4 large eggs
- 1 cup spinach, chopped
- 1/2 cup bell pepper, diced
- 1/2 cup shredded cheese (cheddar or your choice)
- Salt and pepper to taste
- Olive oil or cooking spray for greasing
Instructions
- Preheat the oven to 375°F (190°C) and grease a muffin tin with olive oil or cooking spray.
- Whisk the eggs in a mixing bowl until fully beaten.
- Combine the cottage cheese, chopped spinach, diced bell pepper, shredded cheese, salt, and pepper until well mixed.
- Fill each muffin tin cup about 3/4 full with the mixture.
- Bake for 20-25 minutes, or until puffed and golden.
- Cool for a few minutes before removing from the muffin tin.
- Serve warm or store for later enjoyment.
Notes
These egg bites can be stored in an airtight container in the fridge for up to 4 days or frozen for about 2 months.
