Description

A hearty and cheesy casserole filled with rich ground beef, zesty enchilada sauce, and melted cheese, perfect for gathering with friends and family.


Ingredients

  • 2 pounds ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups enchilada sauce
  • 10 corn tortillas
  • 2 cups shredded cheese
  • 1 can black beans, drained and rinsed
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large Dutch oven, brown the ground beef alongside the chopped onion and minced garlic until the beef is cooked through. Drain any excess fat.
  3. Stir in the enchilada sauce, black beans, cumin, chili powder, and season with salt and pepper to taste.
  4. Layer half of the corn tortillas over the beef mixture.
  5. Sprinkle half of the shredded cheese over the first layer of tortillas.
  6. Add the remaining tortillas on top, followed by the remaining beef mixture and finish off with the last of the cheese.
  7. Cover with a lid and bake for 20–25 minutes until the cheese is melted and bubbly.
  8. Garnish with fresh cilantro before serving.

Notes

Make sure to drain the grease from the meat to keep the casserole from becoming too oily. Experiment with toppings for added flavor.
