- 2 pounds ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups enchilada sauce
- 10 corn tortillas
- 2 cups shredded cheese
- 1 can black beans, drained and rinsed
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- In a large Dutch oven, brown the ground beef alongside the chopped onion and minced garlic until the beef is cooked through. Drain any excess fat.
- Stir in the enchilada sauce, black beans, cumin, chili powder, and season with salt and pepper to taste.
- Layer half of the corn tortillas over the beef mixture.
- Sprinkle half of the shredded cheese over the first layer of tortillas.
- Add the remaining tortillas on top, followed by the remaining beef mixture and finish off with the last of the cheese.
- Cover with a lid and bake for 20–25 minutes until the cheese is melted and bubbly.
- Garnish with fresh cilantro before serving.
Notes
Make sure to drain the grease from the meat to keep the casserole from becoming too oily. Experiment with toppings for added flavor.
