- 1 can (15 oz) white beans, rinsed and drained
- 1 cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh dill, chopped
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large bowl, combine the white beans, diced cucumber, finely chopped red onion, and fresh dill.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper until well combined.
- Pour the dressing over the salad and gently toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
