Description

A refreshing summer salad featuring white beans, cucumbers, and fresh dill, perfect for picnics and barbecues.


Ingredients

  • 1 can (15 oz) white beans, rinsed and drained
  • 1 cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh dill, chopped
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the white beans, diced cucumber, finely chopped red onion, and fresh dill.
  2. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper until well combined.
  3. Pour the dressing over the salad and gently toss to combine.
  4. Chill in the refrigerator for at least 30 minutes before serving.
