- 2 cups shredded chicken
- 1/2 cup dill pickle juice
- 1/2 cup ranch dressing
- 8 small flour tortillas
- 1 cup shredded cheese (cheddar or pepper jack)
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional toppings: chopped dill pickles, green onions, lettuce, tomatoes
Instructions
- In a bowl, mix the shredded chicken with dill pickle juice and ranch dressing until well combined.
- Heat a skillet over medium heat and add the olive oil.
- Place a tortilla in the skillet, top it with a portion of the chicken mixture, and sprinkle a generous amount of cheese on top.
- Cook until the cheese is melted and the tortilla is golden and crispy, about 3-4 minutes per side.
- Remove from skillet and repeat with the remaining ingredients.
- Serve tacos warm with optional toppings.
Notes
For a quicker meal, use rotisserie chicken. Be generous with cheese for added flavor.
