Description

Delicious tacos filled with shredded chicken marinated in dill pickle juice and ranch dressing, topped with crispy cheese and optional fresh toppings.


Ingredients

  • 2 cups shredded chicken
  • 1/2 cup dill pickle juice
  • 1/2 cup ranch dressing
  • 8 small flour tortillas
  • 1 cup shredded cheese (cheddar or pepper jack)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional toppings: chopped dill pickles, green onions, lettuce, tomatoes

Instructions

  1. In a bowl, mix the shredded chicken with dill pickle juice and ranch dressing until well combined.
  2. Heat a skillet over medium heat and add the olive oil.
  3. Place a tortilla in the skillet, top it with a portion of the chicken mixture, and sprinkle a generous amount of cheese on top.
  4. Cook until the cheese is melted and the tortilla is golden and crispy, about 3-4 minutes per side.
  5. Remove from skillet and repeat with the remaining ingredients.
  6. Serve tacos warm with optional toppings.

Notes

For a quicker meal, use rotisserie chicken. Be generous with cheese for added flavor.
