Description

A vibrant Dill Pickle Pasta Salad that combines creamy dressing with the crunch of dill pickles and juicy cherry tomatoes, perfect for summer gatherings.


Ingredients

  • 8 ounces rotini pasta
  • 1 cup dill pickles, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 2 tablespoons pickle juice
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to the package instructions until al dente. Drain and let cool.
  2. In a large mixing bowl, combine the cooled pasta, chopped dill pickles, halved cherry tomatoes, and diced red onion.
  3. In a separate bowl, whisk together the mayonnaise, sour cream, pickle juice, and fresh dill until smooth and creamy.
  4. Pour the dressing over the pasta and veggie mix and gently stir to combine.
  5. Season with salt and pepper to taste.
  6. Refrigerate the salad for at least 30 minutes before serving.

Notes

For a tangier salad, adjust the pickle juice to taste. This salad can be made a day in advance for better flavor melding.
