- 8 ounces rotini pasta
- 1 cup dill pickles, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 2 tablespoons pickle juice
- 1 tablespoon fresh dill, chopped
- Salt and pepper to taste
Instructions
- Cook the rotini pasta according to the package instructions until al dente. Drain and let cool.
- In a large mixing bowl, combine the cooled pasta, chopped dill pickles, halved cherry tomatoes, and diced red onion.
- In a separate bowl, whisk together the mayonnaise, sour cream, pickle juice, and fresh dill until smooth and creamy.
- Pour the dressing over the pasta and veggie mix and gently stir to combine.
- Season with salt and pepper to taste.
- Refrigerate the salad for at least 30 minutes before serving.
Notes
For a tangier salad, adjust the pickle juice to taste. This salad can be made a day in advance for better flavor melding.
