Instructions
- Preheat the oven to 350°F (175°C) and grease a muffin tin or line with paper liners.
- Whisk together sugar and eggs until light and fluffy.
- Stir in the melted butter and vanilla extract.
- Combine flour, baking powder, and salt in another bowl.
- Add the dry ingredients to the wet mixture, alternating with milk, until well combined.
- Fold in the shredded coconut.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool before serving.
