Description

A nostalgic loaf cake filled with fresh blackberries, perfect for breakfast or as a sweet snack.


Ingredients

  • 1 3/4 cups (220g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup (120ml) milk
  • 1 1/2 cups (225g) fresh blackberries

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. Grease and line a 9×5-inch loaf pan with parchment paper.
  3. Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
  4. Cream the softened butter and granulated sugar together until light and fluffy.
  5. Incorporate the eggs one at a time and stir in the vanilla extract.
  6. Combine the dry ingredients with the milk, mixing gently until just combined.
  7. Fold in the blackberries gently to keep them intact.
  8. Pour the batter into the prepared pan and smooth the top.
  9. Bake for 50-60 minutes until a toothpick comes out clean.
  10. Cool in the pan for 10 minutes before transferring to a wire rack.
