Description

Ingredients

  • 1 cup chopped dates
  • 1/2 cup sugar
  • 1/2 cup butter
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until fully combined.
  4. In another bowl, combine the flour, baking soda, and salt. Whisk together.
  5. Gradually add the flour mixture to the creamed butter and sugar until well combined.
  6. Gently fold in the chopped dates and nuts (if using).
  7. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until golden brown.
  9. Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Chop dates with a little flour dust for ease. Room temperature butter helps for better mixing.
