A comforting and versatile crustless quiche filled with eggs, creamy Gruyere cheese, and your choice of mix-ins, perfect for brunch or any meal.

- 6 large eggs
- 2/3 cup whole milk
- 1/4 cup half and half
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- 1 teaspoon Dijon mustard (optional)
- Pinch ground nutmeg (optional)
- 1 1/2 cups mix-ins of choice
- 2/3 cup grated Gruyere cheese (or fontina, sharp cheddar, or smoked mozzarella)
- 2 tablespoons chopped fresh chives
- 4 slices of thick cut bacon (for Broccoli Bacon version)
- 2 cups small chopped broccoli florets (for Broccoli Bacon version)
- 1 small thinly sliced red or yellow onion (for Broccoli Bacon version)
Instructions
- Preheat your oven to 350 degrees F. Coat a 9-inch pie dish with nonstick spray.
- Chop the bacon into bite-sized pieces and cook in a skillet until crispy, about 8 minutes. Remove the bacon and sauté the broccoli florets and sliced onion in the remaining bacon fat for about 10 minutes.
- Whisk together the eggs, whole milk, half and half, kosher salt, black pepper, Dijon mustard (if using), and nutmeg in a large bowl.
- Scatter your sautéed mix-ins in the prepared pie dish, then sprinkle the grated Gruyere cheese on top. Finally, pour the egg mixture over everything.
- Sprinkle chopped fresh chives on top and bake for about 35 minutes, or until the center is set and the edges are lightly browned.
- Let the quiche cool for a few minutes before cutting it into wedges. Serve warm.
