Description

A comforting and versatile crustless quiche filled with eggs, creamy Gruyere cheese, and your choice of mix-ins, perfect for brunch or any meal.


Ingredients

  • 6 large eggs
  • 2/3 cup whole milk
  • 1/4 cup half and half
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1 teaspoon Dijon mustard (optional)
  • Pinch ground nutmeg (optional)
  • 1 1/2 cups mix-ins of choice
  • 2/3 cup grated Gruyere cheese (or fontina, sharp cheddar, or smoked mozzarella)
  • 2 tablespoons chopped fresh chives
  • 4 slices of thick cut bacon (for Broccoli Bacon version)
  • 2 cups small chopped broccoli florets (for Broccoli Bacon version)
  • 1 small thinly sliced red or yellow onion (for Broccoli Bacon version)

Instructions

  1. Preheat your oven to 350 degrees F. Coat a 9-inch pie dish with nonstick spray.
  2. Chop the bacon into bite-sized pieces and cook in a skillet until crispy, about 8 minutes. Remove the bacon and sauté the broccoli florets and sliced onion in the remaining bacon fat for about 10 minutes.
  3. Whisk together the eggs, whole milk, half and half, kosher salt, black pepper, Dijon mustard (if using), and nutmeg in a large bowl.
  4. Scatter your sautéed mix-ins in the prepared pie dish, then sprinkle the grated Gruyere cheese on top. Finally, pour the egg mixture over everything.
  5. Sprinkle chopped fresh chives on top and bake for about 35 minutes, or until the center is set and the edges are lightly browned.
  6. Let the quiche cool for a few minutes before cutting it into wedges. Serve warm.
