Description

These delightful egg rolls are filled with corned beef, cabbage, and cheese, all wrapped and fried to golden perfection, offering a taste of Irish heritage.

Ingredients

Scale
  • 1 cup corned beef, shredded
  • 1 cup cabbage, shredded
  • 1 cup shredded cheese (such as Swiss or Irish cheddar)
  • 1 tablespoon Dijon mustard
  • 1 package egg roll wrappers
  • Oil for frying
  • Salt and pepper to taste

Instructions

  1. Prepare the Filling: In a mixing bowl, combine the corned beef, cabbage, cheese, Dijon mustard, salt, and pepper. Mix until all the ingredients are well incorporated.
  2. Assemble the Egg Rolls: Lay an egg roll wrapper on a clean surface and place about 2 tablespoons of the filling mixture in the center.
  3. Roll It Up: Fold the bottom of the wrapper over the filling, then fold in the sides and roll tightly. Seal the edges.
  4. Heat the Oil: In a deep fryer or large pot, heat oil over medium-high heat until hot and shimmering.
  5. Fry the Egg Rolls: Carefully place the egg rolls in batches into the hot oil, frying until golden brown, about 3-4 minutes per side.
  6. Drain and Serve: Once crispy, drain the egg rolls on paper towels and serve hot.

Notes

Serve with a tangy dipping sauce, such as spicy mustard or creamy ranch. Store leftovers in an airtight container in the fridge for up to 2 days.
