Description

Delightfully crispy zucchini fritters that are easy to make and perfect for summer.


Ingredients

Scale
  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 2 green onions, chopped
  • 1 clove garlic, minced
  • 1 large egg
  • Black pepper to taste
  • Olive oil for frying

Instructions

  1. Grate the zucchinis and sprinkle with salt. Let sit for 10 minutes, then squeeze out excess moisture.
  2. In a bowl, mix the grated zucchini, flour, Parmesan cheese, green onions, garlic, egg, and black pepper until combined.
  3. Heat olive oil in a skillet over medium heat.
  4. Drop spoonfuls of the batter into the skillet and flatten slightly.
  5. Cook for 3-4 minutes on each side or until golden brown.
  6. Transfer to a paper towel-lined plate to drain excess oil.
  7. Serve warm and enjoy!

Notes

For a gluten-free option, substitute with chickpea flour. Experiment with different herbs for added flavor.
