Ingredients

- 2 medium zucchinis, grated
- 1 teaspoon salt
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 2 green onions, chopped
- 1 clove garlic, minced
- 1 large egg
- Black pepper to taste
- Olive oil for frying
Instructions
- Grate the zucchinis and sprinkle with salt. Let sit for 10 minutes, then squeeze out excess moisture.
- In a bowl, mix the grated zucchini, flour, Parmesan cheese, green onions, garlic, egg, and black pepper until combined.
- Heat olive oil in a skillet over medium heat.
- Drop spoonfuls of the batter into the skillet and flatten slightly.
- Cook for 3-4 minutes on each side or until golden brown.
- Transfer to a paper towel-lined plate to drain excess oil.
- Serve warm and enjoy!
Notes
For a gluten-free option, substitute with chickpea flour. Experiment with different herbs for added flavor.
