Description
Deliciously crispy on the outside and moist on the inside, these salmon bites are coated with panko breadcrumbs and tossed in a zesty Bang Bang Sauce.

- 1 lb salmon fillets, skin removed and cut into bite-sized pieces
- 1 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon cayenne pepper
- Oil for frying
- Bang Bang Sauce:
- 1/2 cup mayonnaise
- 3 tablespoons sweet chili sauce
- 1 tablespoon sriracha
- 1 teaspoon lime juice
- Fresh chives or green onions for garnish
Instructions
- Prepare the Breading Station: In three separate bowls, place the flour in one, the beaten eggs in the second, and combine the panko breadcrumbs with the spices in the third.
- Coat the Salmon: Dip each piece of salmon into the flour, then the egg wash, and finally roll it in the panko mixture.
- Heat the Oil: In a large skillet, pour enough oil to cover the bottom and heat over medium-high until shimmering.
- Fry the Salmon Bites: Add the coated salmon pieces in batches, frying for about 3-4 minutes on each side until golden brown.
- Drain the Oil: Remove the salmon bites with a slotted spoon and place on a plate lined with paper towels to drain excess oil.
- Make the Bang Bang Sauce: Whisk together mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth.
- Toss and Serve: Toss the hot salmon bites in the Bang Bang Sauce and serve on a platter garnished with fresh chives or green onions.
