Description

Deliciously crispy on the outside and moist on the inside, these salmon bites are coated with panko breadcrumbs and tossed in a zesty Bang Bang Sauce.


Ingredients

  • 1 lb salmon fillets, skin removed and cut into bite-sized pieces
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper
  • Oil for frying
  • Bang Bang Sauce:
  • 1/2 cup mayonnaise
  • 3 tablespoons sweet chili sauce
  • 1 tablespoon sriracha
  • 1 teaspoon lime juice
  • Fresh chives or green onions for garnish

Instructions

  1. Prepare the Breading Station: In three separate bowls, place the flour in one, the beaten eggs in the second, and combine the panko breadcrumbs with the spices in the third.
  2. Coat the Salmon: Dip each piece of salmon into the flour, then the egg wash, and finally roll it in the panko mixture.
  3. Heat the Oil: In a large skillet, pour enough oil to cover the bottom and heat over medium-high until shimmering.
  4. Fry the Salmon Bites: Add the coated salmon pieces in batches, frying for about 3-4 minutes on each side until golden brown.
  5. Drain the Oil: Remove the salmon bites with a slotted spoon and place on a plate lined with paper towels to drain excess oil.
  6. Make the Bang Bang Sauce: Whisk together mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth.
  7. Toss and Serve: Toss the hot salmon bites in the Bang Bang Sauce and serve on a platter garnished with fresh chives or green onions.
