- 1 (17.5 ounces) pouch sugar cookie mix
- 1 (3.5 ounces) box instant French vanilla pudding mix
- 1/2 cup unsalted butter, melted
- 1 large egg
- 2 tablespoons light brown sugar
- 2 teaspoons vanilla extract
- 2 (8-ounce) blocks cream cheese, at room temp and very soft
- 1 large egg
- 3 large egg yolks
- 1/2 cup sour cream
- 1/2 cup granulated sugar
- 2 teaspoons vanilla extract
- 1/2 cup toffee bits
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×13-inch pan with aluminum foil, lightly sprayed with cooking spray.
- In a large bowl, combine the sugar cookie mix, French vanilla pudding mix, melted butter, egg, brown sugar, and vanilla extract until a thick dough forms.
- Press the dough evenly into the prepared pan.
- In the same bowl, beat together the softened cream cheese, egg, egg yolks, sour cream, granulated sugar, and vanilla extract until smooth.
- Pour the cheesecake filling over the crust. Bake for 40-45 minutes until set but still slightly jiggly in the center.
- Once baked, sprinkle with toffee bits, let cool for about 30 minutes, then chill for at least 3 hours.
Notes
For a refreshing twist, add citrus zest or use different pudding flavors.
