Description

Ingredients

  • 8 oz pasta (fettuccine or penne)
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 8 oz mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil and butter in a skillet over medium heat.
  3. Sauté the sliced mushrooms until golden brown.
  4. Stir in the minced garlic and cook until fragrant.
  5. Toss in the cherry tomatoes and spinach, cooking until the spinach wilts.
  6. Pour in the heavy cream, stirring to combine. Add Parmesan cheese, salt, and pepper.
  7. Add the cooked pasta to the skillet and toss to coat.
  8. Garnish with fresh basil before serving.
