Description

A comforting and nostalgic dish featuring spaghetti enveloped in a creamy sauce with tuna and Parmesan.


Ingredients

  • 8 oz spaghetti
  • 1 can tuna, drained
  • 1 cup heavy cream
  • 2 large eggs
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
  2. In a large pan, heat a drizzle of olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
  3. In a separate bowl, whisk together the heavy cream, eggs, and grated Parmesan cheese.
  4. Once your spaghetti is cooked, drain it, reserving a bit of pasta water, and add it to the pan with garlic.
  5. Gently fold in the drained tuna and pour in the creamy mixture. Toss until well coated.
  6. Continue to stir until everything is combined and heated through, about 3-5 minutes. Add reserved pasta water if needed.
  7. Taste and season with salt and pepper to your liking.
  8. Sprinkle chopped parsley over the top and serve warm.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently with a splash of cream or milk.
