- 1 lb Italian sausage
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 cups spinach
- Salt and pepper to taste
- Olive oil
- Fresh basil for garnish
Instructions
- Cook the rigatoni pasta according to package instructions until al dente. Drain and set aside.
- Heat a drizzle of olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sautéing until the onions are translucent.
- Add the Italian sausage, breaking it up with a wooden spoon, and cook until browned and fully cooked through.
- Pour in the heavy cream and sprinkle in the grated Parmesan cheese. Stir well to create a rich, creamy sauce.
- Add the cooked rigatoni and spinach into the skillet, tossing all ingredients together until the spinach wilts.
- Serve hot, garnished with fresh basil.
Notes
For a variation, try adding sun-dried tomatoes or roasted red peppers. Serve with a simple salad or garlic bread.
