Description

A delightful and creamy pasta salad loaded with fresh veggies, perfect for summer gatherings.


Ingredients

  • 8 oz pasta (such as rotini or penne)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup bell pepper, diced
  • 1 cup shredded cheese (like cheddar or mozzarella)
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh herbs (such as parsley or basil) for garnish

Instructions

  1. Cook the pasta according to package instructions. Drain and cool completely.
  2. In a large bowl, combine the cooled pasta with cherry tomatoes, cucumber, red onion, bell pepper, and cheese.
  3. In a separate bowl, mix mayonnaise, sour cream, lemon juice, salt, and pepper to make the dressing.
  4. Pour the dressing over the pasta mixture and toss until well coated. Adjust seasoning if needed.
  5. Refrigerate for at least 30 minutes. Garnish with fresh herbs before serving.
