Ingredients

- 8 oz pasta (such as rotini or penne)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup bell pepper, diced
- 1 cup shredded cheese (like cheddar or mozzarella)
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh herbs (such as parsley or basil) for garnish
Instructions
- Cook the pasta according to package instructions. Drain and cool completely.
- In a large bowl, combine the cooled pasta with cherry tomatoes, cucumber, red onion, bell pepper, and cheese.
- In a separate bowl, mix mayonnaise, sour cream, lemon juice, salt, and pepper to make the dressing.
- Pour the dressing over the pasta mixture and toss until well coated. Adjust seasoning if needed.
- Refrigerate for at least 30 minutes. Garnish with fresh herbs before serving.
