A comforting creamy casserole loaded with chicken and veggies, perfect for low-carb diets.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup cauliflower florets
  • 1 cup broccoli florets
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Sauté the cauliflower and broccoli in olive oil until tender.
  3. Combine shredded chicken, cream cheese, chicken broth, garlic powder, onion powder, salt, and pepper in a bowl.
  4. Fold in the sautéed vegetables until well mixed.
  5. Transfer the mixture into a greased casserole dish.
  6. Sprinkle shredded cheddar cheese on top.
  7. Bake for 25-30 minutes until golden and bubbly.
  8. Cool for a few minutes before serving.

Notes

For best results, use rotisserie chicken. You can also experiment with different cheeses.
