Description

Delightful creamy lemon truffles that blend the tangy flavor of lemon with a creamy cheesecake-like texture. Perfect for summer gatherings!


Ingredients

  • 8 oz cream cheese
  • 1 cup powdered sugar
  • 2 tablespoons lemon zest
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup graham cracker crumbs
  • 1 cup white chocolate chips
  • 1 tablespoon lemon zest (for coating)

Instructions

  1. In a mixing bowl, beat the cream cheese until smooth.
  2. Gradually add the powdered sugar, mixing well until blended.
  3. Stir in the lemon zest, lemon juice, and vanilla extract until combined.
  4. Fold in the graham cracker crumbs until well incorporated.
  5. Chill the mixture in the refrigerator for about 30 minutes or until firm.
  6. Scoop tablespoon-sized portions and roll them into balls.
  7. Melt the white chocolate chips in a microwave or double boiler.
  8. Roll each truffle in the melted chocolate, then in lemon zest for coating.
  9. Place them on a baking sheet lined with parchment paper.
  10. Refrigerate until set, then serve and enjoy!

Notes

For extra lemon flavor, add a few drops of lemon extract. Use dark or milk chocolate instead of white chocolate if preferred.
