- 8 oz cream cheese
- 1 cup powdered sugar
- 2 tablespoons lemon zest
- 2 tablespoons lemon juice
- 1 teaspoon vanilla extract
- 1 cup graham cracker crumbs
- 1 cup white chocolate chips
- 1 tablespoon lemon zest (for coating)
Instructions
- In a mixing bowl, beat the cream cheese until smooth.
- Gradually add the powdered sugar, mixing well until blended.
- Stir in the lemon zest, lemon juice, and vanilla extract until combined.
- Fold in the graham cracker crumbs until well incorporated.
- Chill the mixture in the refrigerator for about 30 minutes or until firm.
- Scoop tablespoon-sized portions and roll them into balls.
- Melt the white chocolate chips in a microwave or double boiler.
- Roll each truffle in the melted chocolate, then in lemon zest for coating.
- Place them on a baking sheet lined with parchment paper.
- Refrigerate until set, then serve and enjoy!
Notes
For extra lemon flavor, add a few drops of lemon extract. Use dark or milk chocolate instead of white chocolate if preferred.
