Description

A comforting pie filled with creamy mashed potatoes and crispy bacon, topped with bubbling cheese and garnished with fresh chives.


Ingredients

  • 2 lbs potatoes, peeled and diced
  • 1 cup heavy cream
  • 4 slices crispy bacon, chopped
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon butter
  • Fresh chives for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Boil the diced potatoes in salted water until tender, about 15-20 minutes. Drain and mash until smooth.
  3. Sauté the diced onions and minced garlic in a skillet with melted butter until soft and translucent.
  4. Mix the sautéed onions and garlic into the mashed potatoes, adding heavy cream, salt, and pepper.
  5. Fold in the chopped bacon and half of the shredded cheese.
  6. Transfer the potato mixture into a greased pie dish, spreading evenly, and top with remaining cheese.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  8. Garnish with fresh chives before serving.

Notes

Pairs well with a green salad or roasted vegetables. Can be prepared ahead of time and refrigerated.
