- 2 lbs potatoes, peeled and diced
- 1 cup heavy cream
- 4 slices crispy bacon, chopped
- 1 cup shredded cheese (cheddar or your choice)
- 1 medium onion, diced
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 tablespoon butter
- Fresh chives for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Boil the diced potatoes in salted water until tender, about 15-20 minutes. Drain and mash until smooth.
- Sauté the diced onions and minced garlic in a skillet with melted butter until soft and translucent.
- Mix the sautéed onions and garlic into the mashed potatoes, adding heavy cream, salt, and pepper.
- Fold in the chopped bacon and half of the shredded cheese.
- Transfer the potato mixture into a greased pie dish, spreading evenly, and top with remaining cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
- Garnish with fresh chives before serving.
Notes
Pairs well with a green salad or roasted vegetables. Can be prepared ahead of time and refrigerated.
