- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 packet taco seasoning
- 4 cups beef broth
- 1 cup heavy cream
- Salt and pepper to taste
- Toppings: shredded cheese, sour cream, chopped cilantro
Instructions
- Brown the ground beef in a large pot over medium heat until cooked through.
- Add the diced onion and minced garlic, sauté until onions are translucent.
- Mix in the black beans, corn, and diced tomatoes with green chilies.
- Sprinkle in the taco seasoning, stirring well to coat.
- Pour in the beef broth and bring to a boil.
- Reduce heat and let it simmer for 20 minutes.
- Stir in the heavy cream, season with salt and pepper to taste.
- Ladle the soup into bowls and top with cheese, sour cream, and cilantro.
Notes
Try adding bell peppers or jalapeños for extra kick. Can be made vegetarian-friendly by swapping ground beef for lentils or tofu.
