Description

A hearty and creamy taco soup that combines the vibrant flavors of Mexican cuisine with the richness of heavy cream, perfect for cozy evenings.


Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 4 cups beef broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Toppings: shredded cheese, sour cream, chopped cilantro

Instructions

  1. Brown the ground beef in a large pot over medium heat until cooked through.
  2. Add the diced onion and minced garlic, sauté until onions are translucent.
  3. Mix in the black beans, corn, and diced tomatoes with green chilies.
  4. Sprinkle in the taco seasoning, stirring well to coat.
  5. Pour in the beef broth and bring to a boil.
  6. Reduce heat and let it simmer for 20 minutes.
  7. Stir in the heavy cream, season with salt and pepper to taste.
  8. Ladle the soup into bowls and top with cheese, sour cream, and cilantro.

Notes

Try adding bell peppers or jalapeños for extra kick. Can be made vegetarian-friendly by swapping ground beef for lentils or tofu.
