Ingredients

- 1 cup cottage cheese
- 1 can chickpeas, drained and rinsed
- 1/2 cucumber, diced
- 1/2 bell pepper, diced
- 1/4 red onion, diced
- 1 cup cherry tomatoes, halved
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- In a large bowl, combine the creamy cottage cheese with the drained and rinsed chickpeas.
- Next, add the diced cucumber, bell pepper, red onion, and halved cherry tomatoes.
- Drizzle the olive oil and fresh lemon juice over the mixture.
- Season with salt and pepper to taste.
- Gently toss all the ingredients together.
- If desired, garnish with fresh parsley.
- Serve chilled or at room temperature.
Notes
Best enjoyed fresh, but leftovers can be stored in an airtight container for 2-3 days.
