Description

A delightful salad bursting with color, protein, and flavor, perfect for summer days.


Ingredients

Scale
  • 1 cup cottage cheese
  • 1 can chickpeas, drained and rinsed
  • 1/2 cucumber, diced
  • 1/2 bell pepper, diced
  • 1/4 red onion, diced
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large bowl, combine the creamy cottage cheese with the drained and rinsed chickpeas.
  2. Next, add the diced cucumber, bell pepper, red onion, and halved cherry tomatoes.
  3. Drizzle the olive oil and fresh lemon juice over the mixture.
  4. Season with salt and pepper to taste.
  5. Gently toss all the ingredients together.
  6. If desired, garnish with fresh parsley.
  7. Serve chilled or at room temperature.

Notes

Best enjoyed fresh, but leftovers can be stored in an airtight container for 2-3 days.
