Description

A moist and tender bread enriched with cottage cheese, perfect for breakfast or as a side dish.


Ingredients

  • 1 cup cottage cheese
  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup butter, melted
  • 2 large eggs
  • 1/4 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, combine the cottage cheese, melted butter, and eggs. Mix well.
  3. In another bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the milk until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 45-55 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool for a few minutes before transferring to a wire rack.

Notes

For added flavor, experiment with spices or fruit add-ins. Store leftovers wrapped at room temperature for up to 3 days or freeze for up to 3 months.
