Description

A comforting and creamy Colcannon Soup made with potatoes, cabbage, and green onions, perfect for chilly nights.

Ingredients

Scale
  • 4 large potatoes, peeled and diced
  • 2 cups vegetable or chicken broth
  • 1 cup shredded cabbage
  • 1 cup chopped green onions
  • 1/2 cup milk or cream
  • 4 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Sautéing the aromatics: In a large pot, melt the butter over medium heat. Toss in the chopped green onions and sauté until tender.
  2. Boiling the base: Add the diced potatoes and broth, bringing the mixture to a boil. Reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  3. Mixing in the greens: Stir in the shredded cabbage and cook for another 5 minutes.
  4. Blending to perfection: Use an immersion blender to puree the soup to your desired consistency.
  5. The creamy finish: Stir in the milk or cream, season with salt and pepper, and serve hot.

Notes

Colcannon Soup pairs beautifully with crusty bread and can be stored in the refrigerator for up to three days or frozen for three months.
