- 1 cup ricotta cheese
- 1 cup mascarpone cheese
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup mini chocolate chips
- 1 package of phyllo pastry sheets
- 1/4 cup unsalted butter, melted
- Cocoa powder for dusting
- Chopped pistachios for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine ricotta cheese, mascarpone cheese, powdered sugar, and vanilla extract until smooth. Fold in mini chocolate chips.
- Lay out the phyllo sheets on a clean surface and brush each sheet with melted butter. Stack 3-4 sheets together.
- Carefully cut the stacked phyllo into squares and fit them into a greased baking dish.
- Pour the creamy cheese mixture into the phyllo squares, smoothing it out.
- Bake for 25-30 minutes or until golden brown.
- Let the squares cool completely. Dust with cocoa powder and sprinkle on chopped pistachios.
- Slice into squares and serve.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently before serving.
