Description

Delicious Cinnamon Roll Muffins that capture the flavors of traditional cinnamon rolls in a convenient muffin form.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1/2 cup brown sugar
  • 1 tablespoon ground cinnamon (for filling)
  • 1/4 cup powdered sugar (for icing)
  • 1 tablespoon milk (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, granulated sugar, baking powder, salt, and cinnamon.
  3. In another bowl, whisk together the melted butter, milk, and eggs.
  4. Gently combine the wet ingredients with the dry ingredients until just mixed.
  5. In a small bowl, mix together the brown sugar and cinnamon for the filling.
  6. Fill each muffin cup halfway with batter, add a spoonful of the cinnamon filling, then top with more batter until nearly full.
  7. Bake for 15-20 minutes, or until a toothpick comes out clean.
  8. While the muffins cool, mix powdered sugar and milk for the icing and drizzle over the cooled muffins.
