- 3 boneless, skinless chicken breasts, cut into bite-sized pieces
- 10.75 ounces cream of chicken soup
- 10 ounces Rotel diced tomatoes with green chilies (do not drain)
- 1 clove garlic, minced
- 1/2 teaspoon onion powder
- 1 tablespoon butter
- 8 ounces Velveeta cheese, cut into cubes
- 2 ounces cream cheese
- 8 ounces spaghetti, cooked and drained
- 1 cup cheddar cheese, grated
- Salt and pepper to taste
Instructions
- Preheat your oven to 350 degrees F.
- Prepare spaghetti according to package instructions until al dente. Drain and set aside.
- Melt butter in a large skillet over medium to medium-high heat. Add in the bite-sized chicken pieces and sprinkle the onion powder over the chicken. Add minced garlic to the pan, stirring as the chicken sautés for about 7-10 minutes, or until it’s no longer pink.
- Pour the cream of chicken soup, cubed Velveeta, cream cheese, and the undrained Rotel diced tomatoes into the skillet. Reduce the heat to low and keep stirring the mixture until the cheeses melt beautifully and everything is well combined.
- Add your drained spaghetti to the skillet, stirring until every piece of pasta is coated in that creamy, cheesy goodness. Season with salt and black pepper to taste.
- Lightly grease a 2-quart casserole dish and pour the cheesy chicken spaghetti mixture in. Evenly sprinkle the grated cheddar cheese on top. Pop it in the oven and bake for about 25-30 minutes, or until heated through and the cheese is melted and bubbly.
- After baking, optionally garnish with parsley or chopped green onions for a pop of color. Scoop out generous portions, dish it up, and enjoy!

For a creamier texture, let the cheeses soften at room temperature before adding them to the skillet. Consider using rotisserie chicken for a time-saving option or even swapping in shrimp for a seafood twist.
