Description

This Chicken Fajita Casserole is a comforting twist on traditional fajitas, filled with tender chicken, colorful peppers, and a rich, cheesy topping.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes with green chilies
  • 2 cups cooked rice
  • 1 tablespoon fajita seasoning
  • 1 cup shredded cheese
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the cooked chicken, bell pepper, onion, black beans, diced tomatoes, cooked rice, fajita seasoning, salt, and pepper in a large bowl.
  3. Mix everything together until well incorporated.
  4. Transfer the mixture to a greased 9×13 inch baking dish.
  5. Top with a generous amount of shredded cheese.
  6. Bake for 25-30 minutes or until heated through and the cheese is bubbly.
  7. Garnish with fresh cilantro before serving.

Notes

For a vegetarian option, swap chicken for beans or roasted vegetables. For more heat, add diced jalapeños.
