- 2 cups cooked chicken, shredded
- 1 bell pepper, sliced
- 1 onion, sliced
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes with green chilies
- 2 cups cooked rice
- 1 tablespoon fajita seasoning
- 1 cup shredded cheese
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Combine the cooked chicken, bell pepper, onion, black beans, diced tomatoes, cooked rice, fajita seasoning, salt, and pepper in a large bowl.
- Mix everything together until well incorporated.
- Transfer the mixture to a greased 9×13 inch baking dish.
- Top with a generous amount of shredded cheese.
- Bake for 25-30 minutes or until heated through and the cheese is bubbly.
- Garnish with fresh cilantro before serving.
Notes
For a vegetarian option, swap chicken for beans or roasted vegetables. For more heat, add diced jalapeños.
