Description

Fresh and vibrant Chicken Avocado Salad Roll Ups, perfect for a quick lunch, picnic treat, or easy appetizer.


Ingredients

  • 2 cups shredded chicken
  • 1 ripe avocado, mashed
  • 24 tablespoons plain Greek yogurt
  • 1 1/22 tablespoons lime juice
  • 2 tablespoons finely diced red onion
  • 2 green onions, sliced
  • Freshly ground black pepper, to taste
  • 1/4 teaspoon salt, or more to taste
  • 1/2 teaspoon garlic powder
  • 1 1/2 tablespoons fresh cilantro or parsley, chopped
  • 1/2 cup shredded Cheddar cheese
  • 56 tortillas (8 or 10 inch diameter)

Instructions

  1. In a large bowl, combine all ingredients for the Chicken Avocado salad. Stir until evenly blended.
  2. Spread the mixture over your tortillas, ensuring an even layer across each one.
  3. Roll up each tortilla tightly, from one end to the other.
  4. Using a serrated knife, slice the rolled tortillas into 1/2 inch pieces.

Notes

Use ripe avocados for the best texture. For a kick, add diced jalapeños or hot sauce.
