Ingredients

- 1 cup rice
- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 cup salsa
- 1 cup shredded cheese
- 2 cups water or broth
- Salt and pepper to taste
- Chopped cilantro (optional for garnish)
Instructions
- Sauté the ground meat in a large pot over medium heat until browned and no longer pink.
- Drain any excess fat and stir in the taco seasoning, adding water or broth according to the packet instructions.
- Add the rice, black beans, corn, and salsa to the pot. Stir well.
- Bring to a boil, then cover and reduce the heat to low. Simmer for about 20 minutes, or until the rice is cooked through.
- Remove from heat and stir in the shredded cheese until melted.
- Season with salt and pepper to taste. Serve warm, garnished with chopped cilantro if desired.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to a month. Reheat thoroughly before serving.
