Description

A comforting dish of cheesy taco rice with ground beef and colorful veggies, perfect for family meals.


Ingredients

Scale
  • 1 cup rice
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 cup salsa
  • 1 cup shredded cheese
  • 2 cups water or broth
  • Salt and pepper to taste
  • Chopped cilantro (optional for garnish)

Instructions

  1. Sauté the ground meat in a large pot over medium heat until browned and no longer pink.
  2. Drain any excess fat and stir in the taco seasoning, adding water or broth according to the packet instructions.
  3. Add the rice, black beans, corn, and salsa to the pot. Stir well.
  4. Bring to a boil, then cover and reduce the heat to low. Simmer for about 20 minutes, or until the rice is cooked through.
  5. Remove from heat and stir in the shredded cheese until melted.
  6. Season with salt and pepper to taste. Serve warm, garnished with chopped cilantro if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to a month. Reheat thoroughly before serving.
