- 2 chicken breasts, skinless and boneless
- 1/4 cup cream cheese
- 4 slices of prosciutto, thinly sliced
- 2 tablespoons sun-dried tomatoes packed in oil, chopped
- 6–12 leaves of fresh basil
- 2 tablespoons olive oil
- 1/4 teaspoon salt, or to taste
- 1/2 teaspoon pepper, or to taste
Instructions
- Preheat your oven to 450 degrees F.
- Using a meat mallet, gently flatten the chicken breasts until they’re about 1/4 to 1/2 inch thick.
- Spread 1/2 of the cream cheese over each flattened chicken breast.
- Top each breast with a few leaves of fresh basil, 2 slices of prosciutto, and a tablespoon of chopped sun-dried tomatoes.
- Carefully roll up each chicken breast tightly and secure them with toothpicks.
- Sprinkle salt and pepper all over your chicken rolls.
- In an oven-proof skillet, heat the olive oil over medium heat.
- Place the chicken rolls seam side down in the skillet and cook until they are slightly golden brown on all sides.
- Transfer the skillet to the preheated oven and bake for an additional 20 minutes until cooked through.
- Remove the chicken from the skillet, discard the toothpicks, and let it rest for about 15 minutes before slicing.
Notes
Make sure to flatten your chicken evenly for even cooking. Grill instead of bake for a smoky flavor.
