Description

A delightful and healthy twist on traditional fried rice, featuring cauliflower, shrimp, and vibrant vegetables.

Ingredients

Scale
  • 1 medium head of cauliflower, grated
  • 1 cup shrimp, peeled and deveined
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 2 tablespoons green onions, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons sesame oil
  • Salt and pepper to taste

Instructions

  1. Heat sesame oil in a large skillet or wok over medium heat, allowing it to warm up and release its nutty fragrance.
  2. Add minced garlic and the shrimp to the pan. Sauté until the shrimp turns a beautiful pink, about 2-3 minutes, stirring occasionally.
  3. Push the shrimp to one side of the skillet and pour in the beaten eggs. Scramble the eggs in the pan alongside the shrimp until fully cooked.
  4. Add the grated cauliflower and mixed vegetables to the skillet. Stir well to combine, enveloping everything in that deliciously fragrant oil.
  5. Pour in the soy sauce and stir-fry the mixture for 5-7 minutes, letting the cauliflower soften and absorb the flavors.
  6. Season the dish with salt and pepper, adjusting according to your preference, and create a delightful balance of flavors.
  7. Finally, stir in the chopped green onions just before serving, adding a pop of freshness and flavor to the dish.

Notes

Ensure your cauliflower is finely grated to mimic rice texture. You can customize mixed vegetables based on availability.
