Description
A delightful and healthy twist on traditional fried rice, featuring cauliflower, shrimp, and vibrant vegetables.
Ingredients
Scale
- 1 medium head of cauliflower, grated
- 1 cup shrimp, peeled and deveined
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 2 tablespoons green onions, chopped
- 2 cloves garlic, minced
- 2 tablespoons sesame oil
- Salt and pepper to taste
Instructions
- Heat sesame oil in a large skillet or wok over medium heat, allowing it to warm up and release its nutty fragrance.
- Add minced garlic and the shrimp to the pan. Sauté until the shrimp turns a beautiful pink, about 2-3 minutes, stirring occasionally.
- Push the shrimp to one side of the skillet and pour in the beaten eggs. Scramble the eggs in the pan alongside the shrimp until fully cooked.
- Add the grated cauliflower and mixed vegetables to the skillet. Stir well to combine, enveloping everything in that deliciously fragrant oil.
- Pour in the soy sauce and stir-fry the mixture for 5-7 minutes, letting the cauliflower soften and absorb the flavors.
- Season the dish with salt and pepper, adjusting according to your preference, and create a delightful balance of flavors.
- Finally, stir in the chopped green onions just before serving, adding a pop of freshness and flavor to the dish.
Notes
Ensure your cauliflower is finely grated to mimic rice texture. You can customize mixed vegetables based on availability.
