Ingredients

- 4 chicken thighs
- 2 tablespoons soy sauce
- 1 tablespoon brown sugar
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 2 cups chicken broth
- 1 cup water
- 1 cup rice
- 2 green onions, sliced
- Salt and pepper to taste
- Oil for cooking
Instructions
- In a bowl, mix soy sauce and brown sugar. Marinate the chicken thighs in this mixture for at least 30 minutes.
- In a large pot, heat oil over medium heat. Add minced garlic and grated ginger, sautéing until fragrant.
- Add the marinated chicken thighs to the pot and cook until browned on both sides.
- Pour in chicken broth and water. Bring to a boil, then reduce heat and let it simmer for about 20 minutes.
- Remove the chicken and set aside to cool slightly.
- Add rice to the broth and cook according to package instructions.
- Shred the chicken and return it to the pot, stirring to combine.
- Season with salt and pepper, and serve hot, garnished with sliced green onions.
Notes
Marinate the chicken for at least the recommended time for best flavor. If you find the broth too salty, add more water. Add vegetables for extra nutrition.
