- 1 1/2 cups all-purpose flour
- 1 tablespoon sugar
- 1/4 teaspoon salt
- 2 tablespoons unsalted butter, softened
- 1 egg
- 1/4 cup white wine
- 15 ounces ricotta cheese
- 3/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup mini chocolate chips
- Oil for frying
Instructions
- Mix the flour, sugar, and salt in a bowl. Add the softened butter and mix until crumbly. Stir in the egg and white wine to form a smooth dough. Wrap in plastic wrap and chill for about an hour.
- Roll out the chilled dough thinly, about 1/8 inch thickness, and cut out circles of about 3 to 4 inches in diameter.
- Wrap each circle around a metal cannoli tube, sealing the edges with water. Heat oil in a deep pan and fry the tubes until golden brown, about 2-3 minutes. Remove and place on a cooling rack.
- Combine the ricotta cheese, powdered sugar, vanilla extract, and mini chocolate chips in a bowl until smooth and creamy.
- Pipe the ricotta mixture into the cooled shells, dust with powdered sugar, and top with crushed pistachios or chocolate drizzle if desired.
Notes
Best served immediately but can be stored in an airtight container. Keep shells separate from filling for optimal crunch.
