Description

A rich and creamy dessert featuring a beautifully burnt top, reminiscent of a charming café in San Sebastián, Spain.

Ingredients

Scale
  • 2 cups cream cheese, room temperature
  • 1 cup heavy cream
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup all-purpose flour

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Beat the cream cheese in a large mixing bowl until smooth and creamy.
  3. Gradually add the sugar and mix until fully combined.
  4. Add eggs one at a time, mixing thoroughly after each addition.
  5. Stir in the heavy cream, vanilla extract, and salt until incorporated.
  6. Sift in the flour and mix until just combined.
  7. Pour the batter into a lined springform pan.
  8. Bake for 25-30 minutes until the top is deeply browned and the center is slightly jiggly.
  9. Let cool to room temperature, then refrigerate for at least 4 hours or overnight.

Notes

For best results, use room temperature ingredients and avoid overmixing. Chilling the cheesecake helps intensify flavors.
