Description

Ingredients

  • 2 chicken breasts, diced
  • 2 cups cherry tomatoes, halved
  • 1 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Boil the pasta according to package instructions. Once al dente, drain and set aside.
  2. Sauté the diced chicken in a large skillet with olive oil over medium heat, seasoning with salt and pepper, until fully cooked.
  3. Infuse with minced garlic for an additional minute.
  4. Stir in halved cherry tomatoes, chopped basil, and balsamic vinegar, cooking for 3-5 minutes until tomatoes soften.
  5. Combine the cooked pasta with the mixture in the skillet, tossing together until well combined.
  6. Serve immediately, topped with grated Parmesan cheese.

Notes

Make sure the pasta is al dente. Fresh basil enhances the flavor significantly, though dried basil can be used in moderation. Substitute chicken for shrimp or plant-based proteins as desired.
