- 8 oz Farfalle pasta
- 3 cups Fresh spinach
- 1 cup Mushrooms, sliced
- 1 large Onion, sliced
- 2 tbsp Olive oil
- 2 cloves Garlic, minced
- Salt, to taste
- Black pepper, to taste
- Parmesan cheese, grated (optional)
Instructions
- Cook the farfalle pasta according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium heat.
- Add sliced onions to the skillet and caramelize for about 10-15 minutes until golden brown.
- Sauté sliced mushrooms and minced garlic until the mushrooms are tender.
- Stir in fresh spinach and cook until wilted.
- Combine the cooked pasta with the spinach and mushroom mixture, tossing gently.
- Season with salt and black pepper to taste.
- Serve hot, topped with grated Parmesan cheese if desired.
