Description

A delightful and simple dish featuring tender cod fillets topped with a crisp, buttery panko crust, perfect for a weeknight dinner or special gatherings.


Ingredients

  • 4 cod fillets (6 oz each), about 1 inch thick
  • 4 tablespoons butter
  • 1 cup panko breadcrumbs
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon garlic powder
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • Butter for greasing the dish

Instructions

  1. Preheat your oven to 400°F.
  2. Butter a 9×13 inch baking dish.
  3. Pat the cod fillets completely dry and season with salt and pepper.
  4. Arrange the seasoned cod in the prepared dish.
  5. Melt 4 tablespoons of butter in a small saucepan over medium heat.
  6. Remove the melted butter from heat and stir in panko breadcrumbs, parsley, garlic powder, and lemon zest.
  7. Divide the breadcrumb mixture evenly over the cod fillets.
  8. Drizzle the dish with fresh lemon juice and olive oil.
  9. Bake in the preheated oven for 12-15 minutes.
  10. Let the cod rest for about 2 minutes before serving.

Notes

Pat seafood dry to avoid excess moisture and steaming. You can replace cod with haddock or tilapia and swap out panko for crushed Ritz crackers or gluten-free breadcrumbs as needed.
