Description

A comforting and quick dish combining crispy bacon with vibrant bok choy and fluffy rice, perfect for weeknight dinners.


Ingredients

Scale
  • 2 cups cooked rice
  • 4 slices bacon, chopped
  • 2 cups bok choy, chopped
  • 2 cloves garlic, minced
  • 2 green onions, sliced
  • 2 eggs, beaten
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • Oil for cooking

Instructions

  1. In a large skillet or wok, heat a drizzle of oil over medium-high heat. Add the chopped bacon and cook until crispy.
  2. Once the bacon is crispy, add the minced garlic and sauté for another minute.
  3. Stir in the bok choy and sliced green onions, and sauté until the bok choy wilts.
  4. Push the sautéed ingredients to the side of the pan and scramble the beaten eggs in the empty space.
  5. Add the cooked rice and soy sauce, mixing everything together until well combined.
  6. Season with salt and pepper to taste and serve hot.

Notes

For fluffier rice, use day-old rice that has been cooled and stored. Customize by adding your choice of vegetables or proteins.
