A comforting and quick dish combining crispy bacon with vibrant bok choy and fluffy rice, perfect for weeknight dinners.
Ingredients

- 2 cups cooked rice
- 4 slices bacon, chopped
- 2 cups bok choy, chopped
- 2 cloves garlic, minced
- 2 green onions, sliced
- 2 eggs, beaten
- 1 tablespoon soy sauce
- Salt and pepper to taste
- Oil for cooking
Instructions
- In a large skillet or wok, heat a drizzle of oil over medium-high heat. Add the chopped bacon and cook until crispy.
- Once the bacon is crispy, add the minced garlic and sauté for another minute.
- Stir in the bok choy and sliced green onions, and sauté until the bok choy wilts.
- Push the sautéed ingredients to the side of the pan and scramble the beaten eggs in the empty space.
- Add the cooked rice and soy sauce, mixing everything together until well combined.
- Season with salt and pepper to taste and serve hot.
Notes
For fluffier rice, use day-old rice that has been cooled and stored. Customize by adding your choice of vegetables or proteins.
