Description

A fun and hearty twist on the iconic Big Mac, this pasta salad is packed with savory ground beef, crunchy pickles, fresh lettuce, and tomatoes, all wrapped in a creamy Thousand Island dressing.


Ingredients

  • 8 oz rotini pasta
  • 1 lb ground beef
  • 1 cup diced pickles
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup Thousand Island dressing
  • 1 tbsp mustard
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions. Once al dente, drain and cool.
  2. In a skillet, brown the ground beef, seasoning with salt and pepper. Drain excess fat once cooked.
  3. In a large bowl, combine the cooked pasta, browned ground beef, diced pickles, shredded lettuce, diced tomatoes, and shredded cheddar cheese.
  4. In a small bowl, whisk together the Thousand Island dressing and mustard until well combined.
  5. Pour the creamy dressing over the pasta salad and toss everything until well combined.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

Feel free to customize ingredients by swapping ground beef for turkey or a plant-based alternative. Using your favorite burger toppings can also personalize this dish.
