- 2 cups ditalini pasta
- 1 can (15 oz) cannellini beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 4 cups vegetable broth
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Olive oil for sautéing
- Grated Parmesan cheese for serving
Instructions
- Heat the olive oil in a large pot over medium heat.
- Sauté the diced onion, carrots, and celery until softened, about 5 minutes.
- Add the minced garlic and cook for an additional minute.
- Combine the diced tomatoes, vegetable broth, oregano, basil, salt, and pepper. Bring to a boil.
- Add the ditalini pasta and rinsed cannellini beans. Reduce the heat and simmer for about 10-12 minutes until the pasta is cooked.
- Adjust seasoning if needed and serve hot topped with grated Parmesan cheese.
Notes
Feel free to swap out the pasta for whatever you have on hand. Add spinach or zucchini for extra flavor.
