Ingredients

  • 2 cups ditalini pasta
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Olive oil for sautéing
  • Grated Parmesan cheese for serving

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Sauté the diced onion, carrots, and celery until softened, about 5 minutes.
  3. Add the minced garlic and cook for an additional minute.
  4. Combine the diced tomatoes, vegetable broth, oregano, basil, salt, and pepper. Bring to a boil.
  5. Add the ditalini pasta and rinsed cannellini beans. Reduce the heat and simmer for about 10-12 minutes until the pasta is cooked.
  6. Adjust seasoning if needed and serve hot topped with grated Parmesan cheese.

Notes
