Description

A healthier twist on the classic hash browns made with grated cauliflower, cheese, and green onions, perfect for a delightful breakfast.


Ingredients

  • 1 medium cauliflower, grated
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 1/4 cup green onions, chopped
  • 2 large eggs
  • 1/4 cup almond flour (or regular flour)
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Grate the cauliflower and squeeze out excess moisture with a clean kitchen towel.
  2. In a large bowl, combine grated cauliflower, cheese, green onions, eggs, almond flour, salt, and pepper. Mix well.
  3. Heat a skillet over medium heat and add olive oil to create a crispy crust.
  4. Scoop portions of the mixture into the skillet, flattening into hash brown shapes.
  5. Cook for 3-4 minutes on each side, or until golden brown and crispy.
  6. Remove from the skillet, drain on paper towels, and serve hot.
