- 1 medium cauliflower, grated
- 1/2 cup shredded cheese (cheddar or mozzarella)
- 1/4 cup green onions, chopped
- 2 large eggs
- 1/4 cup almond flour (or regular flour)
- Salt and pepper to taste
- Olive oil for frying
Instructions
- Grate the cauliflower and squeeze out excess moisture with a clean kitchen towel.
- In a large bowl, combine grated cauliflower, cheese, green onions, eggs, almond flour, salt, and pepper. Mix well.
- Heat a skillet over medium heat and add olive oil to create a crispy crust.
- Scoop portions of the mixture into the skillet, flattening into hash brown shapes.
- Cook for 3-4 minutes on each side, or until golden brown and crispy.
- Remove from the skillet, drain on paper towels, and serve hot.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for up to 2 months. Ensure moisture is removed from cauliflower for best results.
