Deliciously smoky and spiced vegan lentil meatballs glazed with BBQ sauce, perfect for any meal.
Ingredients

- 1 cup cooked lentils
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1 tablespoon ground flaxseed
- 3 tablespoons water
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1/2 cup BBQ sauce
Instructions
- Preheat your oven to 375°F (190°C).
- Combine the ground flaxseed with water and let it sit for 5 minutes.
- Mash the cooked lentils in a large mixing bowl.
- Add the breadcrumbs, chopped onion, minced garlic, smoked paprika, flaxseed mixture, salt, and pepper to the mashed lentils.
- Form the mixture into small meatballs, about the size of a golf ball.
- Bake for 25-30 minutes until golden brown.
- Brush each meatball with BBQ sauce and return to the oven for 5-10 minutes.
- Serve warm with additional BBQ sauce if desired.
Notes
Store leftovers in an airtight container in the refrigerator for up to four days, or freeze for up to three months.
