Description

Deliciously smoky and spiced vegan lentil meatballs glazed with BBQ sauce, perfect for any meal.


Ingredients

Scale
  • 1 cup cooked lentils
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 tablespoon ground flaxseed
  • 3 tablespoons water
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/2 cup BBQ sauce

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the ground flaxseed with water and let it sit for 5 minutes.
  3. Mash the cooked lentils in a large mixing bowl.
  4. Add the breadcrumbs, chopped onion, minced garlic, smoked paprika, flaxseed mixture, salt, and pepper to the mashed lentils.
  5. Form the mixture into small meatballs, about the size of a golf ball.
  6. Bake for 25-30 minutes until golden brown.
  7. Brush each meatball with BBQ sauce and return to the oven for 5-10 minutes.
  8. Serve warm with additional BBQ sauce if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to four days, or freeze for up to three months.
