A comforting dish combining baked sweet potatoes with smoky BBQ chicken, topped with cheese and green onions.
Ingredients

- 4 large sweet potatoes
- 2 cups cooked shredded chicken
- 1 cup BBQ sauce
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup green onions, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash the sweet potatoes thoroughly, then pierce them with a fork. Place on a baking sheet and bake for 45-60 minutes, or until tender.
- In a bowl, combine the shredded chicken with the BBQ sauce. Stir until well coated.
- Allow the sweet potatoes to cool slightly, then cut open lengthwise.
- Fluff the insides of the sweet potatoes with a fork.
- Fill each sweet potato with the BBQ chicken mixture.
- Sprinkle shredded cheese on top of the stuffed sweet potatoes.
- Bake for another 10 minutes, or until the cheese is melted and bubbly.
- Garnish with chopped green onions and serve warm.
Notes
You can use store-bought rotisserie chicken to save time. Feel free to adjust BBQ sauce amounts per your preference.
