Description

A comforting dish combining baked sweet potatoes with smoky BBQ chicken, topped with cheese and green onions.


Ingredients

  • 4 large sweet potatoes
  • 2 cups cooked shredded chicken
  • 1 cup BBQ sauce
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the sweet potatoes thoroughly, then pierce them with a fork. Place on a baking sheet and bake for 45-60 minutes, or until tender.
  3. In a bowl, combine the shredded chicken with the BBQ sauce. Stir until well coated.
  4. Allow the sweet potatoes to cool slightly, then cut open lengthwise.
  5. Fluff the insides of the sweet potatoes with a fork.
  6. Fill each sweet potato with the BBQ chicken mixture.
  7. Sprinkle shredded cheese on top of the stuffed sweet potatoes.
  8. Bake for another 10 minutes, or until the cheese is melted and bubbly.
  9. Garnish with chopped green onions and serve warm.

Notes

You can use store-bought rotisserie chicken to save time. Feel free to adjust BBQ sauce amounts per your preference.
