Description

A healthy twist on classic comfort food, these Baked Blueberry Cottage Cheese Bowls combine creamy cottage cheese with fresh blueberries for a nutritious breakfast or dessert.


Ingredients

  • 1 cup cottage cheese
  • 1 cup fresh blueberries
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 cup oats
  • 1 tablespoon almond or peanut butter
  • A pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together the cottage cheese, honey (or maple syrup), vanilla extract, cinnamon, and a pinch of salt until well combined.
  3. Gently fold in the fresh blueberries into the mixture.
  4. In a separate bowl, combine the oats and nut butter and mix to form a crumbly topping.
  5. Transfer the cottage cheese mixture into a baking dish and sprinkle the oat topping evenly over the top.
  6. Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
  7. Let it cool slightly before serving warm.
