Description

A harmonious blend of tender pasta, creamy artichokes, and fresh basil, this artichoke pasta is both simple to prepare and deliciously satisfying.

Ingredients

Scale
  • 8 oz pasta (spaghetti or penne)
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, drizzle the olive oil. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Toss in the chopped artichokes and cook for 2-3 minutes until warm and tender.
  4. Add the cooked pasta, Parmesan cheese, fresh basil, salt, pepper, and red pepper flakes. Toss everything together until combined.
  5. Keep tossing until heated through and the cheese melts slightly, creating a creamy coating.
  6. Serve warm, garnished with additional cheese and fresh basil if desired.

Notes

Add cooked chicken or shrimp for extra protein. Consider using gluten-free pasta or zoodles for a low-carb option. Leftovers can be stored in an airtight container for up to 3 days.
