Description

Delightful autumn-inspired cupcakes infused with apple cider and cozy spices, topped with a velvety spiced buttercream frosting.


Ingredients

  • 1 1/3 cup oat flour (certified gluten-free) or gluten-free all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp allspice
  • Pinch of cloves
  • 1/2 cup butter, melted (or coconut oil/dairy-free butter alternative)
  • 1/2 cup brown sugar
  • 1/3 cup applesauce (sweetened or unsweetened)
  • 1/2 cup apple cider
  • 1 tsp vanilla
  • 2 eggs
  • 1/2 cup butter, softened (for frosting)
  • 12 tbsp water, milk, or more apple cider (for frosting)
  • 1 tsp vanilla (for frosting)
  • 1/2 tsp cinnamon (for frosting)
  • Pinch of nutmeg (for frosting)
  • 2 cups powdered sugar (for frosting)

Instructions

  1. In a small mixing bowl, combine oat flour, baking powder, salt, cinnamon, nutmeg, allspice, and cloves.
  2. In a large mixing bowl, cream together melted butter and brown sugar. Add applesauce, apple cider, and vanilla, mixing until well combined.
  3. Beat in the eggs until incorporated.
  4. Stir in dry ingredients until a smooth batter forms.
  5. Preheat the oven to 350°F (175°C).
  6. Line a cupcake pan with liners and spray with non-stick spray.
  7. Fill the liners about 3/4 full and bake for 18-22 minutes.
  8. For the frosting, mix softened butter, 1 tbsp apple cider, vanilla, cinnamon, and nutmeg until fluffy.
  9. Gradually mix in powdered sugar until light and fluffy, adding more apple cider as needed.
  10. Once cupcakes are cooled, frost them to your liking.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days or in the fridge for about a week. They can also be frozen for up to 3 months.
