Description

These fluffy ABC Mini Muffins are perfect for a quick treat or breakfast, easily customizable with fruits or chocolate chips.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips or fruit (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a mini muffin tin with paper liners.
  2. In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix the buttermilk, vegetable oil, egg, and vanilla extract until well-combined.
  4. Pour the wet mixture into the bowl with the dry ingredients and stir gently until just combined.
  5. Fill each muffin cup about two-thirds full with batter.
  6. Bake in the preheated oven for 10-12 minutes or until a toothpick comes out clean.
  7. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store any leftover muffins in an airtight container at room temperature for up to 3 days, or freeze for up to a month.
