Description

A quick and delicious creamy Tuscan chicken dish made without dairy, perfect for busy weeknights.


Ingredients

  • 2 chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups baby spinach
  • 1/2 cup coconut cream or cashew cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the chicken breasts, seasoning with salt, pepper, and Italian seasoning. Cook for 6-7 minutes on each side until browned and cooked through.
  3. Remove the chicken from the skillet and set aside.
  4. Add minced garlic to the skillet and sauté for 1 minute.
  5. Toss in cherry tomatoes and baby spinach, sautéing until spinach wilts and tomatoes soften, about 2-3 minutes.
  6. Stir in coconut cream or cashew cream to create a creamy sauce.
  7. Return the chicken to the skillet, coating with the sauce.
  8. Simmer for 2-3 minutes to heat through.
  9. Serve warm and enjoy!

Notes

Feel free to swap spinach for kale or Swiss chard. For added flavor, consider adding mushrooms or bell peppers.
