- 2 chicken breasts
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 2 cups baby spinach
- 1/2 cup coconut cream or cashew cream
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Heat the olive oil in a skillet over medium heat.
- Add the chicken breasts, seasoning with salt, pepper, and Italian seasoning. Cook for 6-7 minutes on each side until browned and cooked through.
- Remove the chicken from the skillet and set aside.
- Add minced garlic to the skillet and sauté for 1 minute.
- Toss in cherry tomatoes and baby spinach, sautéing until spinach wilts and tomatoes soften, about 2-3 minutes.
- Stir in coconut cream or cashew cream to create a creamy sauce.
- Return the chicken to the skillet, coating with the sauce.
- Simmer for 2-3 minutes to heat through.
- Serve warm and enjoy!
Notes
Feel free to swap spinach for kale or Swiss chard. For added flavor, consider adding mushrooms or bell peppers.
